    今日午餐——无油红烧鸡翅

    原料:鸡中翅8个

    调味料:葱花、姜片、蒜片、花椒、八角、白糖半两、酱油两勺、少量盐

    做法:

     1、锅内放白糖半两,炒到白糖融化-起泡-泡沫消退-白糖变成金黄色时,放入洗净的鸡翅。中火翻炒,直到每块鸡翅蘸糖均匀,变成漂亮的金黄色。

     2、放入热水,水量到淹没鸡翅就行。(千万不要放凉水,因为已经受热的肉块突然受冷,肉皮会收缩,不容易熟也不容易入味)。

     3、放入调味料中剩下的所有东西,中火把鸡翅炖烂,汤汁变少时改大火收汁,干锅前务必出锅。

     总结:步骤一原菜谱中是油锅里放白糖一两白糖,我嫌腻嫌甜,糖减半,直接下净锅,感觉还是有点甜,但确实不腻了;步骤二中水放的有点多,应该减少百分之二十。好在火候和其他调料掌握尚可,口感和味道总体还是蛮不错的,样子也算好看。

     放一张今天鸡翅的成品图,相机无故失踪,只好拿手机凑合一张,效果肯定不行,将就看。
